Not included:  service staff, bartenders & catering chef/ manager (minimum six hours per person, door-to-door); discretional gratuities; tables & chairs; serving pieces; dinnerware, glassware, or disposables; linen; 9.5% (10.5% on 7-1-08) sales tax; table centerpieces, decorations; candles & votives; DJ; entertainment; cus-tom cakes, desserts; other rentals; special licenses or insurance; liquor: CASH Bar; or TAB Bar: $3-4 /beers; $5-6/wines/ Champagne; $5.50+/mixed; $7+/spirits & martinis; or PACKAGE Bar:  one hour $14/person; two hours $22/person; three hours $28.50/person; four hours $32.50/person; tab thereafter; Punches:  from $50 per bowl; Host Liquor Service:  $10/person; (ALL liquor service includes City of Chicago license and dram shop insurance); refuge removal; valet parking; deliveries & transfer equipment; add 35%/guest if under minimum count.

Custom menus and planning are made through chef/owner Dave Samber.  All food and beverages shall be from Polo Café's premises or another licensed facility.  A 50% non-refundable deposit of the Estimated Total is required to confirm a date; final guest guaranty and balance of the Estimated Total is expected five business days before the event; any balance must be paid at the end of the event.  Please make checks payable to Bridgeport U.S.A. Corporation and deliver; do not mail;no credit cards.  Art of Barter trade limited to 50% of food and non-alcoholic beverages only.  Prices and selections may change without notice.  (6-08)
